Sushi Kimura is known for an exclusive sushi restaurant, serving long-aged ingredients for 'Neta' since 2005. The restaurant is located in Futakotamagawa, and attracts everyone who tastes his Sushi with its unique technique. Maguro (Tuna) is one of the most popular fish as an ingredient, but chef Kimura likes it better to use white fish and blue fish, such as Tai (red snapper), Saba (mackerel) because they match his way of cooking. Once tasted, people will be surprised with the harmony created by long-aged ingredients (Neta) and rice (Shari) and will never forget. @arryjapan
